By Mark K. Hawley I have looking for a duck confit that is canned in the duck fat since I returned from a 7 year stint in Europe and this confit met all my expectations.

By cxlxmx I have had good duck confit. This confit by Rougie was packed in duck fat (which was delicious on potatoes) but also highly seasoned with salt. Good duck, excellent texture after warming in pan with duck fat, but too salty for perfection.
